Tomato Salad and Cilantro Lime Black Beans and Coconut Rice
Perfect with Pork Carnitas
When we made these amazing Pork Carnitas today I knew these had to go with it. The flavors of the Coconut rice, the Cilantro Lime black beans and the fresh pop of the Tomato salad were the perfect paring for the pork. All the flavors played well together (unlike my kids lately).
Some notes –
I used canned black beans. Simply because I am lazy and they are easy. Just make sure yours don’t have any funny stuff in them (the clowns make a mess when you go to cook them)
The Tomato salad, I used 2 kinds of tomatoes, because I had them you can make this with either kind my beefsteak tomatoes were getting a little on the soft side so the fresh grape tomatoes made a nice contrast.
The Coconut rice, frankly does not taste like coconut, it is made with coconut milk and has a wonderful flavor and texture and soaks up the flavors from the Carnitas perfectly. Also, I use a rice cooker to make this. If you don’t have one, consider it. There are tons of different types and the cheap ones work just fine.

Cilantro Lime Black Beans
Prep time: 5 minutes
Cook time: 20 minutes
Total time: 25 mins
2 15 oz cans of Black Beans
2 cups Chicken broth or water
1/4 cup chopped cilantro
2 tablespoons Lime juice (one small lime)*
1 tablespoon minced garlic
salt and pepper to taste
Pot 1 quart or larger
appropriate measuring devices
Open the cans of black beans and drain and rinse. Place them in the the pot add remaining ingredients.
Bring to a simmer and cook for about 20 minutes or until the beans are at a texture you like.
Serve. (I know hard huh?)
*If you want more lime flavor add the zest too or just more juice.
Quick Tomato Salad
Prep time: 10 minutes
Cook time: –
Total time: 10 minutes
2 cups of Tomatoes, whatever looks good and fresh chopped into bite size pieces
1 Spring onion sliced very thin greens and all (or 3 green onions)
1/4 cup fresh chopped cilantro
4 tablespoons lime juice
4 tablespoons olive oil
1/4 tsp ground cumin
salt and pepper to taste
Small empty jar
Add the oil, lime juice and cumin to the jar, cover and shake to combine.
Put everything else into the bowl.
Add the oil mix. Stir to comine. Serve.

Cook time: Approx 45 minutes*
Total time: 47 minutes
2 cups (rice cooker size cups) Rice of your choice**
1 14 oz can of coconut milk, this can be whole or lite just not sweetened
1 tablespoon of garlic minced
1/8th teaspoon of kosher salt
Rice cooker measuring cup
Insert tab A into slot B and glue. Just kidding.
Put everything into the rice cooker, mix it and cook per the rice cooker directions.
*The cook time depends on your rice cooker most have about a 45 min cook cycle for 2 cups of rice.
** I used a pearl grain rice but any white rice you like should work except maybe arborio.
