She and her kids have too many food allergies and yet still seem to eat lovely tasty food! I asked her to share her favorite recipe and this is what she sent me. I ordered my hemp seeds to make this today!I can not wait to try it!

At Chez Rantings I must assert with my recipes and all of my cooking that none are tried and tested because I am a terrible recipe follower. Frequently I decide to add something or change the quantity, often I do not measure, I just eyeball. My family has been known to ask, “Can you make this again?” to which I usually respond with, “possibly” or “not likely.”
Two days ago, when my daughter was feeling a little better, I took advantage, had her “play” with her brother and I baked a banana bread.
Here’s what I do…
I read several recipes, then I eyeball my ingredients and tada, I’m done.
It helps so much that I have a forgiving high quality blender, because that’s how we survive all our food eccentricities-we live on smoothies when we are not sick.
I also cook for my mental health, it is zen time for me…dinner, when I have everyone home, I am in my own zone…I race, I sample, I make a mess which I have to clean but I love it! It’s mindless and mindful at the same time. Does this make sense to anyone besides me? I am guessing yes. I try to get my children to contribute, often they do, but really, it’s all about me.
Here is my NEVER GUARANTEED, not recommended recipe let me know if it works for you.
Rich Dense Delicious Chocolate Chunk Banana Bread with Hemp Seeds
Preheat oven to 350f, lightly oil bread (loaf) pan
3 ripe bananas (at least one cup of puréed banana)
1/3 cup of Olive oil
3/4 cup brown sugar
2 tbsp agave nectar
1 egg, one egg white
2 tsp of vanilla
11/2 cup gluten free flour mix (I used bobs red mill because I love the company)
1/4 cup flax meal
1 1/2 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1/2 tsp Xantham gum (omit if in flour mix)
1 big tsp of cinnamon
1/2 cup chocolate chunks & mini chips (more or less or nuts to taste-can add more chips these were not chip dense
1/4 cup hemp seeds
1) Combine wet ingredients in blender or mix until combined
2) Combine dry ingredients in mixing bowl
3) Add wet to dry (may need an additional tbsp of g.f. flour if it looks to wet) until just combined-don’t over mix
4) Stir in chips and hemp seeds
5) Pour into bread pan
Approximate baking time 50 minutes, flours and oven times vary significantly. It is done when a toothpick stuck in the middle of the loaf comes out clean.
