Pressure Cooker Pork Carnitas

We made these amazing Carnitas on Cinco De Mayo.
I know.. they are not Mexican, they are Cuban.
What can I say, I had a craving.
After you have these I hope you crave them too!

My bff was over and took one bite and
said “Holy crap this is so flavorful!” Then made me promise to blog it.

We served this with a Quick easy tomato salad, flavorful cilantro lime black beans and the perfect coconut rice . All very easy and you can get the recipes here.

Pork Carnitas with Black beans, coconut rice and marinated tomatoes.

Pressure Cooker Pork Carnitas

Prep time: 10 minutes
Cook time: 1 hour*
Total time: 1 hour 30 minutes*
Serves: 5

Software
2-3 pounds pork** cut into large (1-2 inch) cubes
3 teaspoons dried oregano
2 teaspoons ground cumin
1/2 teaspoon ground cinnamon
1 onion medium white, coarsely chopped
2 tablespoons garlic, minced
1 teaspoon red pepper flakes
1 bunch fresh cilantro leaves and small stems rough chopped
1 cup orange juice or the juice and zest of one medium orange
1/4 cup Chicken broth
2 tablespoons olive oil
2 tablespoons lime juice or the juice of one medium lime
1 bay leaf
3-4 green onions chopped (white part too)

Hardware
Pressure cooker
Slotted spoon or tongs

Instructions
Put the oil, onions and half the cilantro in the pressure cooker, turn it to a medium high heat and sweat them until the onions are soft.
Add everything else, close the pressure cooker put lock everything down and cook according to your pressure cookers directions.
After an hour remove from the heat and allow to cool enough to open the pressure cooker (about 20 minutes).
Remove from the pressure cooker with tongs or a slotted spoon and top with the remaining cilantro, and the green onion. Serve with your favorite tortillas, or over some yummy rice and beans.

* If you do not have a pressure cooker you can cook this in the oven, after you sweat the onions in a pan add them to a covered dish and cook at 300 for about 3 1/2 hours just cover it tightly and cook until it falls apart.

**this is best with Pork shoulder or fatty cuts of pork but loin works it is a bit dry.
