Minion Bites – Banana, peanut energy bites – Gluten free, dairy free, and sugar free
These wonderful little balls are filled with banana and chocolate flavor, my kids adore them and they are minion approved 😉 They make awesome snacks, treats for after school or before soccer practice, or as an afternoon pick-me up for mom or dad. They are a 20 minute no cook recipe that will give you a quick healthy sweet snack!
This recipe is very versatile it can also be dipped in chocolate, if you want something more truffle like, also you could put something in the middle too like a bigger piece of chocolate and form around that. They can be made into a single sheet and cut into bars.

Serves: Approx. 18 1 inch balls
1 cup banana flour*
1/2 cup lightly salted roasted peanuts
1 medium ripe banana
6 pitted dates
3/4 cup chocolate chips (for dairy free make sure you us a dairy free chip)
Food processor or blender
Break the banana into bite size pieces and add everything into the food processor EXCEPT the chocolate chips. Then pulse the food processor until everything comes together and you can press it with your hand and get a ball.
Add the chocolate chips and pulse a little longer until the chips are just mixed in don’t break them up too much or you won’t have that burst of chocolate and the balls can become oily.
Form with your hands to make about one inch balls they come together with pressure and share! this makes about 18 balls, you can make them bigger or smaller if you like they are about 3 bites this size.
These do require refrigeration for long term storage but are good for several hours at room temp.
* 7 oz of dehydrated banana chips blended in a food processor or blender until a fine powder, pulse at 1st then just blend the heck out of it. There is a banana flour available online called called WEDO but I have never used it.
